Which Bravo XL Pro this is, and what comes with it
This listing is the Bravo XL Pro with Grill, model 20856, a 30-quart countertop oven rated 1800 watts on 120 volts. The owner's manual attached to the listing is titled for model 20856 and names the product Bravo XL Pro Smart Oven & Air Fryer with Grill. On Nuwave's own product page the same oven is the option called Bravo XL Pro with Grill (PFAS Free), and that option's barcode matches the listing's UPC, 652185902015.
The manual's parts page lists a base, a pull-out crumb tray, a heavy-duty cooking rack, a grill pan, a mesh rack, a light bulb with cover and a temperature probe, each with a part number for reordering. The listing's package list adds a quick start guide and a recipe book. Nuwave's product page shows two box lists for its two options; the grill version's list is a stainless steel rack with grill/griddle, crumb tray, cooking rack, probe and recipe book, with no air fry basket.
Nuwave's page describes three top and two bottom heating elements with a convection fan and four rack levels. The listing counts twelve functions; the manual's menu pages give defaults for toast, broil, air fry, bake, pizza, grill, slow cook and dehydrate among them, plus 100 programmed presets and 30 user preset slots numbered 101 to 130, which cannot be named.
Counter space: the size figures disagree, so measure for the largest
Three different outside sizes are published. The listing's details table says 13.75 inches deep, 20.25 wide and 11.25 high; one listing bullet says 20 by 12.88 by 11.13 inches; Nuwave's specifications say 19.875 long by 14.75 wide by 11.125 high, plus a 2-inch handle. Weight is 17.8 pounds on the listing and 25 pounds on Nuwave's page. Plan the space around the largest numbers until you can measure.
Then add clearance. Safeguard 19 in the manual says the intake vents are on the back and sides and there should be at least 5 inches of free space behind, to the sides of and on top of the oven. The toaster-oven warnings also say nothing should be stored on top during operation. So the oven cannot sit tight under a cabinet or against a wall.
Power matters too. The manual says the oven should run on a separate electrical outlet from other operating appliances because of its wattage, and a Nuwave answer on the product page puts the draw at 1800 watts, or 15 amps. Check which outlet it will share before you settle on a spot.
What fits inside
Nuwave's FAQ gives inner dimensions of 14.5 by 13.5 by 7.6 inches and a cooking area of 14.25 by 12.125 by 6.0 inches with the rack at the lowest level. It says a standard 13 by 9 by 3 inch dish fits, but pans with long handles may not. The specifications block on the same page gives the inside as 14.50 by 13 by 7.625 inches, and another Nuwave answer on the page gives 14.5 by 12.5 by 6.5 inches.
The listing claims room for two 13-inch pizzas, a 10-pound chicken, a 6-pound roast or 2 pounds of fries. The manual's troubleshooting adds that if the door will not close, the food is too large, so measure large roasts and poultry against the cooking-area figures above.
The 100-hour timer only applies at low temperatures
The listing advertises a 50 to 500°F range and a timer up to 100 hours. The manual's chart shows the maximum time shrinks as the temperature rises: up to 99 hours 59 minutes between 50 and 275°F, 24 hours from 280 to 350°F, 4 hours from 355 to 400°F, 1 hour from 405 to 450°F, and just 30 minutes from 455 to 500°F.
Menu limits vary too. Air fry and bake top out at 450°F in the manual, while grill runs to 500°F and broil defaults to 500°F. Sear defaults to 500°F for 5 minutes and runs up to 30 minutes. Warm holds 140 to 200°F for up to 3 hours. The Slow Cook entry lists a default of 165°F but a range of 275 to 325°F, and says the probe must be used, so ask Nuwave before relying on that function.
The top and bottom heaters default to 50/50 and can be shifted, but always add up to 100 percent; Pizza uses 30 top and 70 bottom. The fan defaults to its highest speed, 3, and can be turned down to 0, which switches it off.
The probe, cleaning and what goes in the dishwasher
For the probe, you set a target between 50 and 212°F, default 165°F; the oven beeps three times within 10°F of it and stops cooking when it is reached. If the timer runs out first, the manual says the oven keeps cooking until the probe target is met.
The listing calls the accessories dishwasher-safe. The manual is narrower: accessories go on the top rack only, the probe is hand-wash only, and the manual warns that frequent dishwasher cleaning may lead to premature wear. The main unit must never be immersed.
Care is otherwise routine but firm. Empty and clean the crumb tray after each use and never run the oven without it; do not cover the crumb tray with foil; do not use steel wool or harsh abrasives inside or out. A heated plastic smell on first use is normal, per the manual.
Warranty: one year, original purchaser, freight on you
Nuwave's product page states a 1-year manufacturer's warranty with what it calls VIP warranty service. The manual sets the terms: one year from purchase against manufacturer defects, for the original purchaser, under normal household use, with parts and labor provided at Nuwave's service department.
To claim, you prepay shipping to and from the service department and include an RGA number obtained by emailing Nuwave support, plus the model and serial number and a copy of the receipt. The warranty applies only within the continental United States, excludes commercial or rental use and resold units, and is voided by unauthorized repairs or a removed serial plate; Nuwave also reserves the right to void it for purchases from unauthorized dealers.
The manual includes an arbitration clause with a 30-day window from delivery to opt out. Read that section of the manual as soon as the oven arrives so the window does not pass.
